(It takes 2) FRUIT SALAD

Plain and simple (actually, way too simple) fruit salad but packed with yummy goodness.

2 cups vanilla flavored yogurt (great with lowfat vanilla yogurt from Organic Valley, available at Whole Foods Market, see below)

2 packages (3.5 oz each) vanilla instant pudding mix

2 cans canned fruits (29 oz can tropical fruit salad + 11 oz can mandarin oranges), well-drained

2 ripe bananas, chopped

2 apples, chopped

2 cups colored miniature marshmallows

2 cups whipped cream (1 cup whipping cream, whipped)

Coarsely chopped peanuts (optional)

In a large mixing bowl, whisk yogurt and pudding mixes until mixture thickens.  Fold in well-drained canned fruits, bananas, apples, marshmallows and whipped cream.  Refrigerate until serving.  Yield: 8 servings.

So you see, I even divided the fruit salad in 2 round trays…one for me, and one for YOU!
