Coco-lime Crumble Cookies

Another melt-away type cookies I love in my cookie jar are these coco-lime crumble cookies.  Yup, I put lime in the coconut, and boy, I just can’t stop.  These are fun to make, really. 

 

COCO-LIME CRUMBLE COOKIES

Dough:

2 sticks (1 cup) butter, softened

zest of 1 lime

1 cup confectioners sugar

2 tablespoons lime juice (2 limes)

2 cups all purpose flour

1 cup sweetened shredded coconut, tinted with green food color

Coating: (combine in large ziplock bag)

1 cup confectioners sugar

zest of 1 lime

 

Preheat oven to 350 F. Line ungreased cookie sheets with parchment paper. Set aside.

Mix together all cookie dough ingredients. Form small balls using mini scooper. Transfer to prepared cookie sheet, 2 inches apart. Bake for 15 minutes until cookies are puffy and bottoms are golden. Allow the baked cookies to cool on cookie sheets for 5 minutes. While cookies are still warm, carefully toss them in the coating. Place in wire racks to cool completely.
