BOB RECIPE: Coconut Bars
Crust:
1 (18.5 oz) package White Cake Mix
1/4 cup (1/2 stick) butter or margarine, softened
1/4 cup coconut
1/4 cup chopped pecans or walnuts
2 large eggs
Topping:
1 (14 oz) can Sweetened Condensed milk
1 large egg
1 teaspoon vanilla
1 1/3 cups shredded sweetened coconut, divided
1 cup chopped pecans or walnuts
Preheat oven to 350 F. Spray a 9 x 13 pan with cooking spray.
In a large bowl, stir together the crust ingredients and spread in the prepared cake pan.
In a small bowl, combine the milk, eggs, and vanilla. Beat well. Fold in 1 cup of the coconut and the pecans. Spread evenly over the crust in the pan. Sprinkle with the remaining 1/3 cup of coconut. Bake for 30 to 40 minutes or until golden brown.
