BOB RECIPE: Easy Spinach Quiche

Product:  Fresh spinach (washed and ready to use)

Spinach are stored in the refrigerator crisper drawer.  Add chopped spinach to scrambled eggs, rice, spaghetti and soups.

BOB RECIPE:  Easy Spinach Quiche

3 cloves garlic, minced
1 small red onion, diced
2 tablespoons olive oil
1 package fresh spinach, chopped, large stems removed
2 cups sliced mushrooms (I use canned mushroom pieces)
6 oz crumbled feta cheese
2 oz shredded cheddar cheese
salt and pepper to taste
1 (9-inch) deep dish Pie Crust
4 eggs, beaten
1 cup whole milk
2 small tomatoes, sliced

Preheat oven to 375 F.

In a large skillet over medium heat, saute garlic and onion in olive oil until onion is translucent.  Stir in spinach and mushrooms; cook until spinach is wilted.  Remove from heat.

Add feta and cheddar cheeses; season with salt and pepper.  Spoon mixture into pie crust.

In a medium bowl, whisk eggs and milk together.  Pour over spinach mixture and combine thoroughly, then place sliced tomatoes on top.

Bake 45 minutes, or until center is set.  Cool 10 minutes before serving.
