BOB Recipe: Salmon and a Red Bell Pepper Sauce

BOB Recipe:  Salmon and a Red Bell Pepper Sauce

5 salmon fillets (a package normally contains only 4 fillets)
2 red bell peppers
2 tomatoes
1 small yellow onion
1/2 bottle dry white wine
4 tablespoons cornstarch
4 bay leaves
1/2 teaspoon Goya seafood seasoning
salt and pepper to taste
olive oil

1. finely chop pepper, tomato and onion
2. cook veggies on olive oil till tender
3. add white wine and reduce
4. add cream (Note: not provided, but probably 1/4 to 1/2 cup heavy whipping cream) and seasonings
5. cook until sauce thickens
6. pour sauce in food processor and blend until smooth
7. return to boil and serve over salmon and rice
