BOB RECIPE: Shrimp Scampi

BOB RECIPE:  Shrimp Scampi

1 lb large, peeled and deveined shrimp
2 teaspoons olive oil
1/4 cup unsalted butter
1 1/2 tablespoons minced garlic
1 tablespoon capers, crushed
1/2 cup dry white wine
1/4 cup fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 lb cooked Rotelle or favorite pasta
3 to 4 tablespoons chopped fresh parsley leaves

Dry ingredients:
2 1/2 tablespoons paprika
1 tablespoon onion powder
1/2 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Thaw shrimp:  Rinse shrimp in a bowl under cold water, approx 10 minutes.

Toss thawed shrimp in a bowl with dry ingredients.  Place olive oil and 2 tablespoons butter in a large skillet over high heat.  Add shrimp, cook 2 minutes, then quickly turn the shrimp.  Add garlic and capers to cook 30 seconds.  Add wine, lemon juice, and remaining 2 tablespoons butter to cook for1 1/2 minutes.  Season shrimp with salt and pepper, add pasta, tossing to coat well.  Remove from heat and stir in parsley.  Serve hot.
